This recipe came from Shannon, but I made it tonight so I'm sharing it with you!
Cheeseburger Soup
1 lb. Ground beef
¾ cup chopped onion
¾ cup diced carrots
1 tsp. Basil
1 tsp. Parsley
4 Tbsp. Butter
3 cups Chicken Broth
4 cups cubed potatoes
¼ cup flour
2 cups cubed Velveeta
1 ½ cup milk
¼ cup sour cream
In a large pot, melt 1 tbsp. Butter over medium heat; cook and stir vegetables and beef, until beef is brown. Stir in basil and parsely. Add broth and potatoes. Bring to a boil and simmer until potatoes are tender, about 10 – 12 minutes. Melt the remainder of butter and stir in flout in a separate dish. Add the milk, stirring until smooth. Gradually add the milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted add sour cream and heat through. It is really good if you add some shredded cheese on top!
