Q&A with the Hubby

I saw this little questionnaire yesterday on Caroline’s blog and decided I wanted to copy it.  And…. I really wanted to see how closely Tim and I would come with some of these questions.  I knew most of them we’d be right on the money, but there were a few I was curious about, like # 9 & 10.   To say I got helpful answers from him would be a lie.  I don’t know if he’s trying to suck up, or if he’s telling the truth.  I quizzed him on them again after he gave me his answers, and he swears he’s telling the truth… But anyway……  I hope you enjoy, it was fun for me to quiz him.

E: Water for me, Diet Coke/Coke Zero or Tea for him
T: She would get me a diet coke, she would have water.

E: I have no idea
T: They are all wonderful (sucking up much?!?)

E: I have no idea
T: Can't think of a bad meal she has cooked. (again, sucking up much???)

This guy.  He is the love of my life.  He’s amazing.  The End.


This new fish for our family sign that hangs outside our house.  Our sign says “The Johnson Family, Tim & Emily, Established 2008” and it’s woodsy, hanging under the sign currently are three fish, one with each of the kid’s names, Stephanie, Andrew, and Cooper.  We got the sign made on our honeymoon in Gatlinburg, TN.  So, when Tim had a friend going down on vacation in Gatlinburg, he had him pick up one of these fish for Kathryn.  He surprised me so much by bringing this fish to me at work one day!  Turns out it’s a lot larger than the other three, so we cannot use it, and will have to have another one made, but it’s the thought that  counts!  (See above, he’s amazing!)


Our MY new ride!  I’ve been wanting another minivan since we got rid of our Honda Odyssey a couple of years ago, but it wasn’t ever anything urgent, but again, the hubby being so wonderful surprised me last week and told me we needed to go look at one at the dealership.  I loved it as soon as I saw it, so he went for it and brought it home to me on Saturday afternoon while I was busy at work in Katy’s room!  (See, I told you he’s amazing!)



This little boy…. And his new car seat.  We got Cooper a high back booster seat a while ago, but had never installed it.  Once we took his old car seat out of the car that we traded, we decided to install this one instead of the old one.  He LOVES this thing.  He’s such a big boy in it, too!

I just love him to pieces!!

Meal Plan Monday

Another rendition of meal planning for the week. Again I feel like I'm cheating, because of my lessons post, but we are mixing things up again this week, because our schedules have changed.
Monday - fend for yourself.... Tim has baseball (he umpires) all evening and Cooper and I will grocery shop and find leftovers around the house to eat.
Wednesday - Lasagna Roll-ups
Friday - we'll be celebrating with my mom for her birthday, no meal plan

Baby Johnson: 24 Weeks



Holy Belly Batman!  She just keeps poking out further and further.  24 weeks down, 14 (or so) to go….

Notable happenings this week:

  • My ability to wear my overgrown clothing is about done.  I had still been able to wear several of my “fat girl” shirts until this week.  They are getting too short.  Even wearing a long tank top under them isn’t working, I’m having to pull them down constantly, which is a major pain in my butt.  I do not want to be one of those people who walk down the hallway at work with my belly sticking out.  Yes, there are people in my building who have this condition, and they are mostly men, however I have seen at least one woman doing it too, and it grosses me out each and every time…..  Moving on.
  • Cooper is still asking if the baby is ready to come out daily.  This morning he asked me, and I told him no, and I definitely used the bun in the oven comparison to him, substituting brownies.  I told him, “you know how when we make brownies, we have to wait for them to be all the way cooked before taking them out of the oven…..  that’s what we have to do with Katy, we have to wait until she’s ready to come out”  I don’t know if he got it or not, but it seemed to shut him up for the time being.
  • We have started drawing the designs on Katy’s wall.  We hope to finish the drawing this weekend, and we’ll start painting this weekend also.  Mom is coming tomorrow to start, should be good!
  • I had appointments with my OB and the Maternal Fetal Medicine people this week.  Normal 24
    week appointment with the OB, and then an appointment with MFM to do an ultrasound to look at Miss Katy’s heart.  The sonographer could not see the spot on her heart, which doesn’t mean it’s completely gone, but it is a good sign that she didn’t see it, either it’s shrinking or it really has disappeared.  Everything else looked good, there was no reason to see the cardiologist, which makes this girl mommy happy!
  • Other than the continual craving for milkshakes, there have been no additional food cravings this week.

This week's top ten is beauty products. 
 
I'm not big into makeup/beauty products, so I'll give you as many as I can (and please realize I'm stretching the "beauty products" term here).....
 
 
 
1) 1" flat iron - I have this one - a Remington Ceramic - and I love it.  It heats up fast, and works great in my hair.  When my hair was longer, I used this one for curls, now that my hair is short, I just use this for straightening.
 
 
2) Aveeno Daily Moisturizing Lotion - Love this stuff, I've blogged about it several times in the past, it's wonderful!


3) Essie Nail polish - Love, love, love Essie nail polish.  So many colors, and it lasts!



4) Lip gloss - specifically this kind - it's shiny and comforting to my lips.  Burt's Bees is the best!


5) Biolage "Full Lift" Volume Shampoo - I just bought the stuff a couple of weeks ago and I am in love.  It smells so refreshing and you don't need much for a big impact. 
 
6) Biolage "Full Lift" Volume Conditioner - same with this - can you tell I'm stretching out my beauty products?!?
 
Honestly - that's it.  I cannot think of another single "beauty product" that I use that I'm in love with or that would make my top 10.  Maybe I'll do better next Tuesday!

Mamarazzi Monday

Here are some pictures from this past week & weekend..

Valentine's morning, he got a Mickey Mouse Clubhouse battery operated airplane/fan that has candy in the bottom, and a miniature checkers set with rug like you'd find at Cracker Barrell.  He was so excited about both.


Cooper laying in the new baby bed/rocker.  This thing holds up to 40 lbs, and he's been begging me to let him sit in it, so I figured, why not?  And yes, he still wears his Halloween Football costume a couple of times a week.  Crazy kid.


The next two are Cooper in his "tent."  He's been watching a Mickey Mouse Clubhouse episode where they go camping, so he wanted his own tent.  a couple of chairs and a blanket later, and BAM, a tent we had...



A short trip to Home Depot after church yesterday.  Cooper loves the carts where he gets to drive or sit not in the actual cart part.  They are much harder to push, but for a short trip, we can handle it.


The last picture is one Erica took yesterday.  Cooper was playing hockey.  Yup, in cowboy boots, pjs, and his bicycle helmet.   Oh, and it's a golf club that he uses for his hockey stick, of course!


A couple of videos, cause I can't just do pictures... Cooper loves singing to us after church and school each day.  What a stinker, LOVE him so much!

Meal Plan Monday & Giveaway Winner!


I feel like a cheater by posting our meal plan this week. Since I posted our entire plan for the month of February the other day... Oh well, you still want to know, right?

I already know of one change to the plan, Monday's plan has changed because we are having Steph and Ryan over for dinner, so we will shift chicken stroganoff to later in the week (probably the weekend), and have those chicken stuffed shells that we didn't have last week.

Baby Johnson: 23 Weeks

23 Weeks!  Time is flying!
This week’s happenings:
  •  My hips have stopped hurting.  I adjusted my sleep number and what do you know, it worked! I cannot tell you how happy I am about that!
  • Sleep is off and on.  Some nights I sleep ok and then there are nights like last night where I slept terribly.  I have been up since 3:30am and I’m exhausted.  But…. Hopefully tonight will be a better night, right?
  • Work has picked up again in Katy’s room.  Tim’s worked in there some this week and he took the day off today to prepare for paint.  We’re getting the first coat on this weekend.  I CANNOT WAIT TO SHARE!  I’ll wait until it’s finished, but we’re taking progress pictures along the way.  
  • Cravings this week have been all carb related.  It’s like I cannot get enough of them.  Particular favorites:  Milkshakes (still) and Smart Start cereal.  Yum!
 
Here’s this week’s comparison picture between me last pregnancy and me this pregnancy.  I am a whale compared to last time!  Weird thing?  All of my maternity clothes from last pregnancy fit and my shirts still seem to be huge on me.  I don’t quite understand it.

Fridge Fun

I'm playing along with Miss Holly for some fridge fun on this wonderful Friday.

My fridge is pretty unorganized right now, as it always is near the end of the week. We clean out leftovers and old food before we grocery shop, so that'll be Saturday or Sunday.... Until then, this mess.

Staples in our fridge:
  • Shredded sharp cheddar cheese
  • Yogurt for Cooper
  • Eggs
  • Ketchup
  • Sour cream
  • Whole milk for Cooper
  • Skim milk for Tim and me
  • Lemon juice
  • Franks Red Hot
  • Butter
  • Sugar free Popsicles for Tim
  • Ice cream for me
  • French toast sticks for Coop

That's about all as far as our staples.


And yes, our ice maker is broken, it has been for about 2 years. We don't replace it cause we are pretty sure the fridge is going to die soon. Have I mentioned that was about 2 years ago? It STILL hasn't died, so we do ice trays. Yuck. That's a husband job.

Lessons in Meal Planning

Up front, I want to qualify this post by admitting that I am no expert on Meal Planning.  I have learned things as time has passed, I have learned what seems to work in our house and what doesn’t.  There are going to be things that work for me and the Johnson’s that won’t work for your household.  It’s definitely an experiment.  We’ve started doing something a bit different for February and so I thought I’d share what I know about meal planning.

The Past:
When I first started meal planning, it was so that I could plan all my meals for an entire day.  I was on Weight Watchers, so I needed to be able to budget my points throughout the day.  Meal planning was the best way I could do this.  Once I stopped Weight Watchers, I had become so addicted to the “plan” that I’ve not stopped for very long. 

During this time, I planned for 6-7 meals for the week.  So this included one meal for every day of the week.  It might end up being lunch on Sunday, but at least we planned for one cooked meal each day.

Meal planning provided me an easy grocery list.  It’s as simple as that.  If I know what we’re going to eat, I know what to shop for, which makes that two hour weekly routine easier.  With a toddler in tow, that makes a BIG difference. 

I would only plan one week at a time until the last couple of months.  I simply looked at our calendars to see what’s going on for the week, find out if we’ve got stuff going on during the evenings, and plan around those events.  If there was a night where we would eat out, I’d plan for that, if we had time for a quick meal, we planned for that.  It wasn’t so bad.  Then…. I realized what a two week plan could do for me!  We budgeted our grocery dollars on a two week basis, so why not budget our meals on a two week basis?  I could buy everything except the “fresh” foods (produce, milk, etc) for two weeks at a time!  That made week 2 of grocery shopping even easier.  I had a much shorter list, and it took less time.  Did the week 1 shopping trip take longer?  Yes, I’ll admit, it does take a bit longer, but I’m talking like 15 minutes, NOT an additional hour or two that you might think. 

The Present:
Recently – starting at the beginning of February this year, I decided that I wanted to go BIGGER.  I wanted to plan for a month or more in advance.    Was it difficult?  It was at first.  But then I stepped back and looked at the calendar.  There were 28 days in February.  I knew I could think of 28 unique meals that we could mix up and have each day/night.  But then, I stopped and changed things again.  I didn’t want to plan for 28 days.  I wanted to plan for Monday – Friday only.  The reason?  When I was planning for a meal every single day, we wouldn’t end up doing it.  We’d eat out sometimes, we’d cheat and have cereal instead of cooking, we’d find something else to make other than the plan, etc.  So I decided, 5 out of 7 days would have to work for us.  And so far?  It has.

So – I made a list of all of the meals that we regularly make.  Between my list and ones that hubby came up with, we had 30 meals.  Almost enough for an entire months’ worth of every day meals!  I’m sure if I really thought about it, I could come up with some more, but I haven’t needed to yet.

Then I printed some blank calendars, and I started jotting down meals for each week night.   I made sure to keep in mind our schedule, as well as wanting to keep the meal plan full of variety.  Here’s February’s meal plan:

Shopping.  I go through two week menu – right down everything I need for each meal, and then I go through the house, mark off the stuff I already have, and use that as my shopping list.  Of course, I still do not buy the “fresh” foods for week two, I wait until the weekend in between, but that shopping list is much shorter!  And, so far, you know what???  Our grocery bill has gone DOWN.  Ever since we started shopping for two weeks at a time, we have left over money in our budget because our grocery bill has been less.  Now, don’t get me wrong, we usually end up spending it on things we don’t “need” like fun foods from Costco, but still, it’s money we could be saving if we were that smart! :)

The Future:
As Cooper (and Katy) get older, I plan to incorporate them into the meal planning process.  I want to give them the opportunity to choose one meal apiece per week.  This way, we’ll know that they’ll eat that meal.  We may do two meals each if it all works out, but that is my one plan for the future.  I don’t think Cooper is quite ready for that yet, but in the next year or so, I plan to get him into the process.  We’ll see how that goes!

So, I think that’s it.  That’s my meal planning steps.  It sure helped me when I was doing Weight Watchers, and I know I don’t want to live life without a meal plan anymore!  It really helps and keeps us on a good schedule.  Do we ALWAYS stick to the plan?  No, this week for instance, we had a change in our schedule yesterday, so the Stuffed Buffalo Chicken Shells were not made.  Since Hubby bought me a waffle maker for Valentine’s day, we may be having waffles for dinner tonight instead of Stirfry.  We’ll see how it goes.  I know we’ll have those stuffed shells this weekend, and Stirfry can be saved because everything is frozen or packaged and not “fresh.”  Yay for that.

LOAA: Guest Post & Giveaway!

Today, my friends, I have a special post for you – a guest post from my IRL BFF Erica.  That’s her, on the right, in the picture below.  The other lady there is her wife, Mel.  They are more than friends to me, they are my family, and they are about to embark on a journey that I wanted to share with you – so I did what any normal friend would do, I got her to write a post to tell you all about it. 


Hey Bloggers!

I know none of you know me (yet), but I’m that elusive BFF that Emily occasionally mentions on her blog, Erica. 

Hi!  I also occasionally check in on (stalk) the blogs that Emily follows, so I might know more about all of you than you think I do… J

For a little background, Emily and I met in the dorms our Freshman year of college.  We lived on the same floor and hung out first semester, and each had roommates we weren’t entirely thrilled about.  When a room on our floor became available second semester, we’d already become such close friends that we decided to move in there together.  We were roomies all the way up until Emily got married in 2008 – she and Tim and Cooper (and baby Katy!) are family to me.  Emily, Tim and I even work for the same company, in the same building!

I’m not much of a blogger in the sense that most of you are – I don’t have kids (yet) that do entertaining (or crazy) things, I’m not very crafty, and my life is rather average day-to-day.  Yet somehow, I have 12 blogs to my name on Blogger, just none that are really complete or that I have updated in, say, 5 years…  I’m good at starting them, but not on the whole keeping up part.

So why am I here then?  Well…my wife and I are doing something pretty adventurous and kinda cool this summer – we’ve decided to bike (as in bicycle, not the giant kind with motors) across this great country of ours, and raise money for charity in the process.  We’ve coined our journey Looking Out Across America (or LOAA for short), and we’re thrilled to see the country in such a unique way, and raise money for a good cause in the process.

We’ll ride over 4,400 miles on Adventure Cycling’s TransAmerica Trail, from the Atlantic Ocean in Virginia to the Pacific in Oregon, then up to Seattle, WA for the big finish.  We’re riding to raise funds and awareness for musician Brandi Carlile’s Looking Out Foundation, which provides funds for some great humanitarian organizations and projects like The IF Project, Easter Seals, Honor the Earth, the Fight the Fear Campaign and Why Hunger.  We’re donating 50% of what we raise to the Fight the Fear Campaign, and the other 50% will go toward the general Looking Out Foundation fund.


You might be asking yourself, why bike across the country?  Well, about four years ago now, I stumbled onto a website where people blog about their bicycle touring adventures.  I’d never bike toured, nor had I spent much time on a bike as an adult – but the more I lived vicariously through the adventure blogs of other riders, the more that trail sunk it’s claws into me.  It wasn’t long before I knew I had to do it someday.   And luckily my partner-in-crime grew to share this dream, and decided she would join me!

So starting in June, we’ll spend about 90 days “in the saddle”, as they say, on loaded touring bikes, struggling to make it to our day-to-day destinations, and having the time of our lives.  We’ll be blogging along the way too!  As often as possible, but hopefully daily we’ll upload some notes and photos (and probably some of that awesome action video that makes everyone queasy) from the road.

Random Tuesday

Here's some radom to go along with whatever your doing today.....

  • I forgot to post my 22 week Baby Johnson update last week, so I plan to do that later, hopefully today.  If not, you might just see two weeks worth on Friday.
  • TOMORROW..... I am having a guest post from my BFF, Erica, and also a giveaway, so be sure to come back tomorrow and check that out.
  • My breakfast today was so delicious I have to share with you - a banana and peanut butter....  yummo!
  • Today is a shorter day for me at work, I'm leaving about an hour early to take Cooper to the local bounce house place to play with his buddy Max.  It should be fun.
  • The next two weekends should be busy busy busy....  we're going to be working on Katy's room.  Tim wants to have it done by March 9th and we've got stuff going on both of the first two weekends in March, so we'll have to kick butt at it this weekend!
  • My little Cooper boy is so crazy.  He's obsessed with water, showers, baths, washing his hands, etc.  If he could, I think he'd be in the water or playing with water 100% of his time.

  • Babies Pregnant Mamas are everywhere around me.  I have two neighbors that are pregnant, a co-worker and Max's mom is also pregnant.  I feel like I am surrounded by people having babies.  Love having people to commiserate with!
  • I haven't seen Kampbell since last week and it's driving me crazy, I need to see that little girl soon!

Meal Plan Monday

Today's edition of MPM is going to be pretty easy, as most of my weeks have been lately! I am all about easy meals during the week, especially since I am pregnant and I just am not in the mood to spend so much time in the kitchen.

Later this week I plan to post about how we go about meal planning, how that has changed since we first started, how we've made some recent changes and how I see it changing in the next few years..... But for now, I leave you with this week's meal plan.

Monday - Tacos (ground turkey, tortillas, chips, cheese, lettuce, black beans, salsa, sour cream and everything else that goes along with tacos.....)

Tuesday - Grilled cheese and soup. Coop will just eat grilled cheese and I'll have tomato soup, Tim will have some other soup, to be determined.

Wednesday - Buffalo Chicken Stuffed Shells and broccoli

Thursday - Chicken Stirfry over rice with crispy chow mein noodles

Friday - homemade pizza (BBQ chicken for 1/2 and buffalo chicken for 1/2)

Baby Johnson: 22 Weeks

22 Weeks!  Only 16 more to go……  Wow, that second number keeps decreasing and I’m loving it.
New stuff this week:
  • My hips hurt!  I’ve been advised to only sleep on my sides, to favor my left side if possible.  Therefore my left hip has been hurting like crazy.  Not just during the night, but while sitting at my desk at work, and while doing anything I’m doing.
  • Cooper keeps asking me when Katy is coming out.  Soon son, soon.
  • We haven’t done any more in Katy’s room, but that’s coming soon, we’ve got plans!
  • I feel like I’m wobbling along when I walk already.  I hope I don’t look as bad as I feel like I do.
  • I’ve been drinking a milkshake almost every night.  Not really craving the ice cream out of a bowl like I did with Cooper, but wanting a milkshake all of the time.
  • Milk and water are still my beverages of choice.  I've been drinking very few beverages other than milk and water.  I think this is good, just so different than my normal tastes.  I normally would love lots of flavored drinks thrown in there.
  • Cravings - I'd love a beer.  Or Margarita.  I'd love to have a cold roast beef sandwich from anywhere.  I'd love some queso from a Mexican restaurant.  Of course, all of these are foods I'm not allowed to have.  Funny how that works, huh?
  
Now, here is where we will start the comparison pictures from Cooper’s pregnancy and Katy’s.  I started taking weekly pictures when I was pregnant with Cooper at 22 weeks, so from here on out, we’ll have these comparison pics.  Pretty sure I'm ginormous compared to what I was with Cooper, do you agree??

Today, I'm loving....


My sweet family.  They are all so special to me and I love them so much!

My parents and grandparents..... I'm so lucky to have both of my parents and my dad's dad and mom's mom still living.



Meal Planning....  I've never been such a meal planner, but this week, Tim and I made some meal plans for the next several weeks, and I'm excited to share them with you on the next few Mondays.



Jimmy John's!  I've been craving JJ since I got pregnant, but since they have lunchmeat sandwiches, I've bene steering clear due to the threat of listeria.  BUT.... I found a loophole.  Their VEGGIE sandwhich.  So, that's what's for lunch today.  I'm excited, can you tell?
