Broccoli Beef Pie

 
My family loves this recipe, it has good for you stuff in it (also bad), it's delicious!  We have this at least once per month.  I often-times don't have the hour it takes between getting it ready and baking in an evening so I will make the filling ahead of time and then refrigerate it until I'm ready to assemble and bake the next day.  Only takes a few minutes to assemble and throw in oven vs making filling.  It does not take that long to make the filling either, but between everything else, it just makes it nice to prepare ahead of time.
 
If your family likes ground beef and broccoli, this is definitely a recipe to try! 




 
 
Beef & Broccoli Pie

Filling:
1 lb. ground beef Milk to brush on crust
1/4 c. chopped onion
2 tbsp. flour
3/4 tsp. salt
1 1/4 c. milk
1 (3 oz.) pkg. cream cheese, softened
1 egg, beaten
1 (10 oz.) pkg. frozen, chopped broccoli, cooked and well drained
 
 
Pastry for 2 crust (9 inch) pies
4 oz. Monterey Jack cheese
Directions:
  1. Brown beef and onion; drain fat.
  2. Stir in flour and salt.
  3. Add milk and cream cheese. Cook and stir until smooth and bubbly.
  4. Add beaten egg to a portion of hot mixture, then add to remaining mixture.
  5. Cook and stir over medium heat until thickened, 1 to 2 minutes.
  6. Stir in cooked broccoli. Set aside.
  7. Line a 9 inch pie plate with half the pastry. Fill pastry with hot mixture.
  8. Slice cheese (or use shredded) and arrange on top of meat mixture.
  9. Seal with top crust and perforate crust. Brush top with milk. Bake at 350 degrees for 40-45 minutes.
  10. Let pie stand for 10 minutes before serving.
