Meal Plan Monday & Giveaway Winner!
I already know of one change to the plan, Monday's plan has changed because we are having Steph and Ryan over for dinner, so we will shift chicken stroganoff to later in the week (probably the weekend), and have those chicken stuffed shells that we didn't have last week.
Here's the plan:
- Monday - rosamarina chicken (chicken in the wok)
- Tuesday - 2x4
- Wednesday - chicken stuffed shells (buffalo and regular Italian)
- Thursday - steak & baked potatoes & green beans
- Friday - tuna salad sandwiches

Meal Plan Monday
Later this week I plan to post about how we go about meal planning, how that has changed since we first started, how we've made some recent changes and how I see it changing in the next few years..... But for now, I leave you with this week's meal plan.
Monday - Tacos (ground turkey, tortillas, chips, cheese, lettuce, black beans, salsa, sour cream and everything else that goes along with tacos.....)
Tuesday - Grilled cheese and soup. Coop will just eat grilled cheese and I'll have tomato soup, Tim will have some other soup, to be determined.
Wednesday - Buffalo Chicken Stuffed Shells and broccoli
Thursday - Chicken Stirfry over rice with crispy chow mein noodles
Friday - homemade pizza (BBQ chicken for 1/2 and buffalo chicken for 1/2)

Weekend Wrap-up & MPM
\We have had a busy yet pretty fun weekend. Friday evening, Tim, Cooper and I drove to Louisville, KY to visit my dad in the hospital. I mentioned here that he had been in quite a car accident. He to have a follow up surgery on the 18th, so we went to visit and see how it all went. Other than being nauseous and in a lot of pain due to the surgery, he was going to be fine. The surgeon was quite impressed with his work, and that’s what we always want!
Cooper fell asleep in the car on the way down, we were only about 30 minutes from the hospital, but at least he got a little nap.
After the hospital we stopped to get my beloved King Fish for dinner then headed to my Mom’s house. We stayed the night at her house. Cooper stayed awake until around 10 that night when we all decided to hit the sack.
The next morning, we hung around my mom’s house for awhile, then went to lunch and then we headed to the hospital to visit my dad. We stayed around the hospital for a couple of hours then went home back to Indy, back to the frigid temperatures. On the way home, my boy fell asleep quickly in the car, he’d had a long day.
Sunday we had church, out for lunch, then came home, made some more brownie cupcakes, hung out with Erica and Mel, and watched several children’s television shows. My favorite!
When we were at lunch, Cooper sang us a song that he had learned. I’ve gotta tell you, this made me tear up, I was so proud at this moment.
Today, Three day weekend for us due to MLK holiday, we visited with Steph, Ryan and Soup, she’s just the cutest thing! Tim put up some shelves around Kampbell’s room, and I made buffalo chicken stuffed shells for us to eat for lunch. Yummo!
This is a long post, but I need to get my MPM post in for the week!
Here’s what’s on the menu for this week.
- Steak and baked potatoes
- Teriyaki Chicken Noodle Bowls
- Grilled Chicken over a green salad
- Tuna Salad Sandwiches
- Spaghetti (we didn’t have this last week)

MPM
I haven’t done a MPM post in quite awhile, because frankly, we haven’t been making meal plans. We’ve been just going with the flow and making whatever, but not this week. We planned out the next couple of weeks – so plan on at least a post for the next two weeks with our meal plans.
Tim and I are trying especially hard to stick to our grocery budget, and he’s trying to keep as healthy as he can as he’s trying to lose some weight. We did all of our grocery shopping over the weekend and not only stuck to the budget, we were way under! So… without further adieu, here’s our meal plan for this week.
Sunday: 2x4 (soup-very chili like)
Monday: Soup & Grilled Cheese
Tuesday: Breakfast
Wednesday: Stuffed Buffalo Chicken Shells, Green Beans
Thursday: Salmon, Broccoli, Couscous
Friday: Out of Town
Saturday: Out of town if we make it home for dinner, well have Spaghetti

Meal Plan Monday

This week we only need 4 meals because I have bible study on Wednesday night and Tim has a dinner that night as well. Cooper will of course eat, but we won’t make a big meal for him, he can just eat something we have left.
Monday night: We’ll grill some salmon, have a salad and some other kind of veggie, broccoli probably.
Tuesday: One of those freezer meals that I posted about.
Wednesday: see above.
Thursday: Grilled Chicken, baked beans, salad and some veggies, maybe couscous.
Friday: Stir fry with either pork or chicken.

Misc & MP Monday
- I’m lucky my husband is still with us right now. His car caught on fire at the gas station the other day when he stopped to get gas. He could have been on the highway and then only God knows what would have happened. So, I’m blessed beyond measure that he is ok, and that his car was a fairly easy fix.
- Mr. Cooper had a fever this weekend. It started Saturday night. he was fine all day on Sunday but came back last night. He seems to be okay this morning, so we’ll just have to see how it goes today. That was until I took his temperature, and sure enough, we're staying home today, 100.9 degrees!
- Ryan, Steph and Soup came over on Saturday and had dinner with us, it was so great to see them. Love those kids!
- I worked in the 3 year old preschool class at church yesterday. I think I’m signed up to work there weekly for the rest of the school year. I have many good things to say about those workers, they have patience beyond measure. I know working with lots of 3 year olds each week will help my patience and I will be praying for it daily.
- We made a “Thanksgiving” dinner yesterday. We had to defrost our deep freezer, and we had a whole turkey in there, so we went ahead and made it. We’ll have turkey meals all week. Yum!
- Big Brother is by far my favorite reality show. I love the drama.
- We’ve had Direct TV for two months now and I still do not know the channel line up, nor where any of my shows are. I take that as a good thing – maybe I’m not watching as much TV as I used to?!?
- Are all 3 year olds such a mess? My Cooper has toys out everywhere all of the time. I can pick them up multiple times per day and within an hour, he’s got all of them pulled out. We pick them up and put them away constantly.
Now onto our meal plan for this week. We are trying to stick to our grocery budget this week since we went way over our budget the last couple of weeks. Way over by at least $150. OUCH! Why is it so easy to spend so much money on groceries? Anyhow, the reason I tell you this is to express that we’re trying to eat lots of the food we have here instead of splurging as much as we did last week.
- Grilled Salmon with salad, steamed broccoli, and tropical fruit.
- Turkey Pot Pies with salad, baked beans and tropical fruit.
- Ground Turkey Tacos with green beans and tropical fruit.
- Turkey rice casserole with salad, corn and tropical fruit.
- Buffalo Chicken Stuffed Shells with salad and tropical fruit.
Ok, long enough picture-less post for me, oh wait, I’ll go ahead and add a picture for fun. This is my little guy on his 2nd birthday. Cannot believe this he is going to be 3 in just over 1 month. Craziness.

Meal Plan Monday
I’m late getting this post up today, at least I’m doing it. You’re welcome.
This week, I’m making several new meals. Since it’s Monday night, I’ve already made two of them, and I’ve gotta be honest here, I’ve not been all that impressed with either of them. Here is my issue with some (most) recipes I find online: lack of flavor (or what I perceive to be lack of flavor). I totally weed through online recipes before deciding to try new ones because some I can just tell will be bland. But these that I chose this week looked good. And, I still have hopes for the remaining ones.
So far, I’ve made crock pot potato soup. I think I put too many onions in it, but Tim loves it. I have yet to have more than one bite of it when its been warm. I am going to take some for lunch tomorrow so I’ll have to get back to you. It was SUPER easy to make. I didn’t make this for a meal, I made it for our lunches and whatever meals are in between.
Then I made this: Cream Cheese Crock Pot Chicken, we had it for dinner tonight. I really thought this was going to be awesome. I thought it looked delicious and with the rotel, it was bound to have a kick right? Nope. It was bland bland bland. She has a note at the bottom of the post stating that it might require some additional seasonings but I figured I’d try it without. Now, I probably won’t be making it again to try it with additional seasonings because I just didn’t care for it that much. I served it over rice like she suggested.
Here’s the rest of the week’s meal plan:
Tuesday Night: Dashing Dish’s Lasagna Roll-ups Another easy night because I had made a double batch of these the last time I made them, so these are all ready for me in the freezer, just need to bake them when we get home.
Wednesday Night: Crock Pot Beer Chicken Can you tell I’m all about easy this week? I just needed an easy “crock pot” kind of week.
Thursday Night: Tacos
Friday Night: Not sure – I have one more meal on the docket, but I have a feeling it’ll be pushed off to next week, but here it goes: Chicken Teriyaki Noodle Bowl.
I am all about trying new recipes, but I also need to keep some of our regulars in the rotation because the fam gets sick of trying new things all of the time.

Meal Plan Monday on a Wednesday
It’s Wednesday, I know, I’m late with this, but at least I’m posting it!
We’re having a few easy dinner nights this week as Tim is doing some umpiring and I just am not in the mood to cook as much!
Monday night we had Grilled Cheese and Soup. My Campbell’s tomato soup (entire can with 1 can skim millk) and grilled cheese came out to be a total of 14 WW points plus. I have no idea what other soups are, I’m sure you can find better choices, but this is what I was craving.
Tuesday night we had Mama Laughlin’s Chicken Enchilada Bake. I am going to forego posting points for this one, because I didn’t even figure them out. Our Greek yogurt froze when It was in the fridge, so I had to improvise with other ingredients and I am thinking this wasn’t good for us at all!
Today we’re having baked spaghetti. – point values to be updated at a later date when I post the recipe on the blog.
Thursday and Friday – well, we’re scheduled to have pork chops with green beans and baked beans one night and Hamburger Helper and salad another night. My mom is coming into town on Friday so I can foresee that at least one of these meals will not take place because we’ll hang out and go out to dinner Friday night. Oh well!

- Mama Laughlin’s Skinny Doritos Taco Bake – yummo! – Again, we were supposed to have had this the previous week and it was a fail, so I tried again, and success.
- Spaghetti – we ended up skipping it.
- Grilled pork chops/broccoli/couscous – skipped it.
- Stir Fry – Success
- Tuna Salad Sandwiches – skipped.
